I fancied a cake which contains plums and cinnamon. It’s cinnamon season as it’s Autumn so I decided to make something which is nutritious, tasty and is perfect to an afternoon tea or coffee. It’s easy to make and requires only one bowl, one spoon and a silicone baking tray.
Ingredients for 6 pieces:
30g of oats
10g of milled linseed
30g of coconut flour
40g of ground almonds
1 teaspoon of cinnamon
1 teaspoon of stevia
1/4 spoon of baking powder
40g whey protein (I used the unflavoured one)
150 ml of milk (I used semi skimmed one)
1 large egg
100g of plum slices for decoration
Mix all the dry ingredients together, add the milk, egg and mix well. Pour into the baking dish. Place the plums on the top and bake for 30 minutes at 180 degrees. Let the cake cool and enjoy!
